This Chipotle Aioli is SO delicious, SO simple and SO versatile!
A great sauce can transform any ‘blah’ dish into a delectable one! Just wait until you’ve tried this Chipotle Aioli.
We use it on tacos, burgers, any kind of bowl, breakfast burritos and as a dip for quesadillas.
I always use the Embasa Chipotle Peppers in Adobo Sauce. You can find them in the Mexican food aisle in any grocery store.
The adobo sauce has a nice, rich, smokey flavor and the peppers hold most of the spice. The garlic and lemon give it a great bite and acidity! The key here… Balance!
If raw garlic is too much for you, use roasted garlic!
If you’re not a big fan of spice, take out some or all of the seeds from the chipotle pepper.
How to make it
Mix all the ingredients together in a small bowl, it should be a yogurt like consistency. Stick it in the fridge and let sit for at least 15 minutes to let the flavors marry. This sauce will keep in the fridge for about a week.
- 1 cup Mayo
- 1 tbsp Fresh lemon
- 1 Chipotle Pepper
- 1 Tbsp Adobo Sauce
- 1 clove Garlic pressed or finely chopped
- Salt & Pepper to taste
