
Banana Split Overnight Oats
I was scrolling through Instagram when I came across this beautiful photo of Banana Split Overnight Oats. I immediately scoured my pantry and kitchen to see if I could re-create it. I always like to put my own twist on recipes I find and this one was another winner!
I have a new love for chia seeds and have been making chia pudding (stay tuned for a post about this!) for awhile now but I hadn’t tried them in oatmeal (another love of mine).This could easily be one of my new favorite breakfasts. The only thing that would make it better is to pair it with something salty, like a side of bacon! 🙂
The steps are so simple. You can literally throw the oatmeal together in less than 3 minutes and then stick it in the fridge . Let it sit overnight in the fridge and you’re ready to go!
Assembly of this Banana Split Overnight Oatmeal bowl is so adaptable too. You can switch out the toppings and get creative!
→ I used blueberries, but it would go great with raspberries or strawberries!
→ I used peanut butter but any nut butter would work.
→ The seeds add a great texture and crunch, you could use any seed you want or even use granola.
→ The Dark chocolate was such a wonderful addition. If I had cacao nibs I would’ve preferred to use those! I wouldn’t recommend using milk chocolate. You want to be able to call this breakfast healthy and that crosses the line a bit in my opinion 🙂
When you’re ready to assemble, slice a banana length wise, add the oatmeal (hot or cold- I like it hot), top with berries of your choice, peanut butter, dark chocolate or cacao nibs (optional, but so yummy), pepitas or seeds of your choice and ENJOY!

Banana Split Overnight Oats
Ingredients
Overnight Oats
- 1 cup Quick cooking oats
- 1.25 cup Milk of your choice
- 1.5 tbsp Chia Seeds
- 1 tsp Vanilla extract
- 1 tbsp Honey
Toppings
- 1 Banana
- Berry of choice I used Blueberries
- Peanut Butter Melted, Drizzled
- Dark Chocolate/Cacao Melted or Nibs
- Seeds of choice I like Pepitas or Sunflower
Instructions
Make the oatmeal
- Mix together the oatmeal ingredients
- Refrigerate overnight
To Assemble
- Slice a banana lengthwise
- Add oatmeal between the banana slices (hot or cold- I prefer it hot)
- Top with berries of your choice
- Melt the peanut butter and dark chocolate for 30 seconds, drizzle over top
- (If you're using cacao nibs, sprinkle them on top instead of melting them)
- Sprinkle seeds of choice over top
- Enjoy!!
